What is Verjuice - I hear you ask? Vales Verjuice (French for green juice) is non-alcoholic and made from unripen Shiraz grapes sourced from the Greenway vineyard in Broke, Hunter Valley. The grapes were harvested by family and friends in late January, then immediately basket pressed and after a short settling period of 3 weeks it was filtered and bottled.
Vales Verjuice has the faintest pink tinge, after all it was made from Shiraz grapes, its sweet-tart taste has hints of Granny Smith and grape juice.
It can be used in a variety of dishes as a substitute for lemon juice or vinegar, it, enhances the flavours of Asian, Middle Eastern and European cuisine with its soft acidity and natural sweetness. With its high concentration of antioxidants and polyphenols verjuice is known to have many health benefits.
We love using Vales Verjuice in just about anything. It can be added to vinaigrettes, fresh oysters or in fish ceviche, or it can be used as a marinade for chicken, fish and vegetables.
Another favourite use by the Vales family is adding a splash in vodka and soda or into my gin tonic (uhm......, maybe I should give gin making a go?)
Once opened it should be kept in the fridge or for longer storage periods pour into cube trays.
